Cobb Salad Skewers:

You can eat this snack all year round, but it’s easiest to make after Easter since you will have the most leftover eggs probably. Thread all the fixings for a classic Cobb salad onto bamboo skewers: grape tomatoes, quartered boiled egg pieces, and rolled strips of romaine lettuce, plus cubes of avocado, rotisserie chicken, and ham. Serve with a side of blue cheese dressing for dipping.

Easy as that! Onto the next scrumptious snack!

Banana Sushi:

Start with a peeled banana. Trim one end so that it’s flat, and set the banana upright on the cut. Use a butter knife to apply a coating of all-natural (sugar-free) nut butter, then roll the fruit in a healthy topping. Examples are: chia seeds; unsweetened, shredded coconut; crushed pretzels; and chopped walnuts. Cut into 3/4-inch slices and serve. If you can’t consume peanut butter you may also use sunflower-seed butter or soy butter.
